tomato pie.

heirloom tomatoes from my father-in-law's garden; they are UNGODLY DELICIOUS and we're looking for any excuse to eat them.
cornbread mix with basil and cilantro.
baked in a cast iron at 425.

layered tomatoes, ground turkey with red onion/garlic/shallot, a greek yogurt/lemon/basil/dijon mix, topped with the rest of the cornbread mix.

bake at 425 for 45 minutes; let it rest for 45 afterwards.
we ate it with an herb salad and white wine. nom nom nom nom nom.
