Because sometimes you find yourself alone in the house on a rainy Saturday morning, a little bleary-eyed, sure, but awake and up and at 'em and DEFINITELY not going to the gym, because, just, no. And so you sit at the table and open your computer (because muscle memory is telling you to get to work) and it occurs to you that returning emails right now would be an enormous bummer, and not just for you but for the recipient, too – because who wants to think about work on a Saturday morning? No one. And you are one of those no ones, and so you bypass gMail and head straight for Longform, which leads you to a seven thousand word piece about the making of Blonde On Blonde, and after a paragraph or two the rain and the grey light through the window start working in your favor, because this is a mood that you are FEELING. And so you get up and you find Blonde on Blonde on the shelf and you put it on the record player and you make yourself some coffee and it all starts to feel very INDULGENT, doesn't it? And since indulgence is not a train that you are afraid to board – albeit one for which you rarely purchase tickets – banana pancakes + berries become a logical and necessary addition to what's shaping up to be a perfect morning. Enjoy them.


one ripe, peeled banana
one egg
1/4 cup almond meal*
1 tsp. shredded coconut (optional)
a shake or two of cinnamon (optional)
1 tsp. grapeseed oil

Mash the banana in a medium bowl until mostly smooth, then add the egg, almond meal, coconut, and cinnamon, and stir until mixed. In a large, non-stick skillet over medium/medium-lo heat, add grapeseed oil to coat, then pour two pancakes from your mixture. Cook 3-5 minutes, then flip to cook the other side through, 2-3 minutes. Top with berries and serve immediately.

*if you don't have almond meal on hand you can definitely go without – I've made these with just egg, banana, and cinnamon and they're great. The almond meal just makes them a little more P A N C A K E Y.
